With this pan, you too can get tasty Maillard reactions. I had been cooking on non-stick and stainless steel (not clad) cookware that I inherited. This is much, much better. Sauteed vegetables and pan fried cutlets just taste better. It deglazes like a champ. This is a heavy pan, feels like a cast iron skillet. Check Save Price!

In another permutation of this life, I was an artist, a trained chef practicing at a 4.5/5 star restaurant. But, now, alas, I am a mere home-kitchen scullion (note the slight tautology). Anyway, if you get my meaning–this pan, too, is a lot of marketing flash-in-the-pan. Seven layered silver-tongued palaver and all that rot. I don’t think this pan does a wit better than All-Clad, or Calphalon One (with all its dye-fading faults), or, heck, for that matter, my well seasoned cast-iron skillet. If you’ve worked in a commercial kitchen in any capacity, you know a lot of what we are being sold for use in our home kitchens is a bill-of-goods. The king’s new cloths are nothing more than a butt-naked marketing (lie) posing in sequined designer loafers. And this pan is nothing more than a good deal of “technology-speak” folded into some marketing spiel that don’t make no butter–so to speak.
One thing Demeyere Atlantis cookware does have going for it, hands down, is the lack of rivets. I wish more manufacturers would use welding. Not that it cooks any better. It just “looks” nicer. And if welds versus rivets on handles is a big deal for you–then you’ve found your ideal expensive cookware in Demeyere. As for me, if I want to burn a good deal of money on cookware, I’ll burn it on top of the line copper, such as Mauviel, it performs better, never mind the rivets.
